Traditional Christmas Cookies
The name "Cavalluccio" (little horse) dates back to the 16th to the 18th century, when these pastries were offered to the travelers for refreshment at the horse-changing post stations.
Ingredients:
300 gr of sugar
100 gr of walnuts
Orange scrub
cinnamon
300 gr of flour
100 gr of water
1 tablespoon of fennel seeds
1 teaspoon of baking powder
Preparation:
Mix orange scrub with the roughly chopped walnuts.
Mix the flour and baking powder and place on the work surface. Mix the sugar and water and stir in the walnut and orange mixture, spices and fennel seeds.
Work the mass under the flour until a soft dough is formed.
Form small, elongated balls, press them flat and place them on a baking tray lined with baking paper. Bake at 120/130 ° C for about 18 minutes.
Check the Cavallucci during baking, they must not be dark!
When cooled, they should be crispy on the outside and soft on the inside.
